Resumen

El uso de bacterias probióticas formadoras de esporas, como Bacillus spp., se ha incrementado debido a su capacidad de formar esporas dando como resultado una mayor resistencia durante los procesos de producción, almacenamiento y comercialización. Bacillus clausii está en el mercado desde hace más de 55 años y se caracteriza por la presencia de cuatro cepas probióticas (O/C, SIN, N/R y T). En este estudio, el Bacillus clausii , del producto comercial Enterogermina ®, fue obtenido de farmacias y droguerías de la ciudad de Dourados-MS. Para caracterizar Bacillus clausii para su uso como probiótico, se realizaron análisis de pH 2 y 3, prueba de tolerancia e hidrólisis de sales biliares al 0,3%, prueba de tolerancia a pepsina y pancreatina, prueba de adhesión y actividad de hemólisis. En los análisis de tolerancia a pH ácido, sales biliares, pepsina y pancreatina, no hubo diferencias significativas con respecto al log UFC/mL -1 de las células iniciales. 67% de adherencia sobre chapa de acero inoxidable. Mostró hidrólisis de sales biliares y actividad γ-hemolítica en agar sangre. Lo que indica un gran potencial probiótico.
